Washington’s Double R Ranch, which is famous for its premium beef – 100% natural, grass-fed and grain-finished. The cattle are carefully raised by a network of family ranchers from the Northwest on 70,000 breathtaking acres in the Okanogan region, providing an ideal environment for the animals’ health and comfort.
This rare cut is considered to be the single most delectable and flavorful steak available. Also known as the ribeye cap, deckle steak, calotte, or spinalis dorsi, it is highly prized by top chefs, beef aficionados, and butchers alike. Surprisingly, a cut this spectacular is not universally known by its name, however, anyone who has cut that small morsel of the cap from a ribeye has realized there’s something special going on. If you look at a ribeye steak, you’ll see the large eye of meat that’s the center of the cut. Surrounding this center is the spinalis dorsi, or cap of ribeye. We carefully remove this from the entire ribeye roll to produce a beautiful cut that has the tenderness of a filet mignon, the rich marbling of a rib steak, and a mouthwatering flavor and texture all its own. The cap of ribeye is hard to find and is only available in limited quantities.

All Snake River Farms and Double D Ranch products are aged to maximize the flavor and texture of our beef. They employ two different methods:
A technique where subprimal cuts of beef are vacuum-sealed and allowed to rest in refrigeration for a minimum of 21 days. Natural enzymes tenderize the beef and allow deeper flavors to develop. The product is not exposed to the air, so there is no weight loss. Our products are all wet-aged 21 days or more before they are packaged and shipped.
A unique process where beef subprimal is placed in a carefully controlled environment in order to intensify their natural flavor and make them more tender. All products are dry-aged a minimum of 45 days which is the minimum amount of time to enhance the flavor.
How are the animals fed?
Double R Ranch Beef is grass and hay fed on pasture for the first year of their life. They are then fed a sustainable diet of hay, forages, as well as potatoes, vitamins, and minerals.

My Review of Cap of Ribeye
The product arrived well-packaged and completely frozen. After thawing the meat, I was able to make two large Beef Wellingtons, and still have enough left over for a couple of steaks as well. I used some of the trimmings to make some beef stock as well. The meat itself was tender and flavorful. A fantastic product that I would definitely order again! Get the pictured meat Cap of Ribeye (Aff), or see all Double R Ranch offerings Double R Ranch. Really nice steaks. Tasty and tender. Some of them are a little odd shaped but cook up great. I pan fried them in butter to seal them and baked them for 5 minutes at 400 degrees. Perfect Medium rare and tender. Highly recommended. I ordered some ribeyes just based on the taste of the first order. You won’t go wrong ordering get this meat. The packaging is extremely professional as well. Thanks for a great meal!
