Description

Each American Wagyu Kobe Ribeye includes the rare cap section.

Pioneering Quality Beef

Wagyu and high-quality cattle were first bred in the late 1980s, and they knew this was something special in its deep flavor and sublime marbling. Snake River Farms and Double D Ranch have been mastering that prized combination ever since. It is more work that takes precision, genetic mastery, and a dedication to unending refinement and innovation. They control the entire supply chain, from the ranches where cattle are raised to the humane processing facility to the in-house customer care team. It would be easy to outsource but being a pioneer does not mean taking the easy way. It means doing work the right way.

Aging Beef

All Snake River Farms and Double D Ranch products are aged to maximize the flavor and texture of our beef. They employ two different methods:

Wet-Aging

A technique where subprimal cuts of beef are vacuum-sealed and allowed to rest in refrigeration for a minimum of 21 days. Natural enzymes tenderize the beef and allow deeper flavors to develop. The product is not exposed to the air, so there is no weight loss. Our products are all wet-aged 21 days or more before they are packaged and shipped.

Dry-Aging

A unique process where beef subprimal is placed in a carefully controlled environment in order to intensify their natural flavor and make them more tender. All products are dry-aged a minimum of 45 days which is the minimum amount of time to enhance the flavor.

How are the animals fed?

Snake River Farms American Wagyu Beef cattle are grass and hay fed on pasture for the first year of their life. They are then fed a sustainable diet of hay, forages, as well as potatoes, vitamins, and minerals. SRF cattle will never receive any growth agents or growth-promoting hormones.

My Review of American Wagyu Gold Grade Traditional Ribeye 1.5″ Thick

The product arrived well-packaged and completely frozen. Not a speck of silver skin or gristle. These are wonderful and will be a welcome meal when my son comes home from college for winter break. They can’t come home for Thanksgiving so I wanted to be sure there is something extra special for that 4-week break. The meat itself was tender and flavorful. A fantastic product that I would definitely order again! Get the pictured meat American Wagyu Gold Grade Traditional Ribeye 1.5″ Thick (Aff), or see all Snake River Farms American Wagyu Beef offerings Snake River Farms American Wagyu Beef. Really nice steaks. Tasty and tender. Some of them are a little odd-shaped but cook up great. I pan-fried them in butter to seal them and baked them for 5 minutes at 400 degrees. Perfect Medium rare and tender. Highly recommended. I ordered some ribeyes just based on the taste of the first order. Best steak I’ve ever had, well worth the price…and I qualify that by saying that the price restricts this to a rare-special-occasion-only purchase. I’ve paid good money at excellent steak houses (including wagyu steak) and this is by far the best. Thanks for a great meal!

My Review of American Kobe Wagyu Gold Grade Flat Iron

The product arrived well-packaged and completely frozen. Not a speck of silver skin or gristle. These are wonderful and will be a welcome meal when my son comes home from college for winter break. They can’t come home for Thanksgiving so I wanted to be sure there is something extra special for that 4-week break. The meat itself was tender and flavorful. A fantastic product that I would definitely order again! Get the pictured meat American Kobe Wagyu Gold Grade Flat Iron (Aff), or see all Snake River Farms American Wagyu Beef offerings Snake River Farms American Wagyu Beef.

Description

Our Kurobuta pork collar is a beautifully marbled cut.

Pioneering Quality Pork

Kurobuta hams have a passionate following. Just one bite and you’ll understand why. Rich in flavor with a hint of smoke and a touch of sweetness, these are not like any other ham or pork meats. The secret to success is using a signature family cure and smoking over real hardwood. Gourmet hams start with Kurobuta pork that is highly marbled and dark pink in color. The Kurobuta pork cuts have the bone for a traditional appearance, wonderful flavor and is the perfect start to the post-dinner split pea soup. The Kurobuta hams and pork consistently receive top scores in artisan ham comparisons and are frequently featured by celebrity chefs and culinary experts during the holidays. Kurobuta is the Japanese term for “black hog” and refers to animals of the Berkshire variety, a heritage breed. Kurobuta pork is highly marbled with a beautiful dark color, firm texture, and naturally delicious flavor. The animals are treated humanely and are raised on small family farms without hormones using a natural slow feed process.

How are the animals fed?

Snake River Farms American Kurobuta Pork hogs are fed on a co-op of small family farms in the Midwest and are fed a combination of corn, soybean meal, oats, vitamins and minerals. No artificial hormones or gestation crates are used in SRF pork production.

I would’ve bought a whole bone-in ham if I had room in the freezer. I buy these since they run out of stock especially during the holidays and they keep very well in the freezer. Makes turkey look bad, very bad. Simplifies holiday cooking when all you basically have to do is thaw it on time, warm it up, and serve. You can do a glaze or a sauce but it’s pretty perfect without. Get one and you won’t regret it and you’ll crave it. Oh, and the leftovers are fantastic. Highly recommended. The best taste I’ve ever had, my family said they can tell the difference, well worth the price…and I qualify that by saying that the price restricts this to a rare special occasion only purchase. Description

American Wagyu Kobe briskets the “secret ingredient” for competitive barbecue.

My Review of American Kobe Wagyu Brisket 20 + lb.

Get the pictured meat American Kobe Wagyu Brisket 20 + lb. (Aff), or see all Snake River Farms American Wagyu Beef offerings Snake River Farms American Wagyu Beef.
